The world has gone mad the last year on superfoods! Goji berries, chia seeds and quinoa. I am not a healthy superfoods freak. But I do like to keep things in balance. And if there is a healthy alternative for certain foods. Why not try it out? A couple of months ago I tried out buckwheat flour and almond flour for the first time. I made pancakes that were actually quite good. Although I do prefer my egg banana pancakes.

A simple quick lunch with some stuff I already had in my kitchen. I was looking at this baquette I bought two days ago. Such a waste to trow it away. After going through all the stuff in my fridge and decided to make a nice bruschetta. Popping the baquette in the oven would make it perfect to eat.
