I want to share this delicious recipe with you. A healthy version of mini pancakes. I am in no means a gal who eats healthy and skinny all the time. I love food too much. Hamburgers, pizza and pasta. Love it all! And every now and then I will absolutely dig into this delicious comfort food.
However. If there is a healthier skinny version of something that I love, which is also effortless and easy to make. I am all up for it. Why not? I have been following a couple of healthy foodies on Instagram or Facebook. This recipe came to my attention. Easy to make, still super delicious and healthy.
The recipe is a healthy banana pancake. Super easy and yummy.
– 1 egg
– 1 banana
– some fruits like blueberries, raspberries, strawberries
– optional: maple syrup, honey, nutella
Mash the banana. Beat the egg. Put the banana and the egg together. Add a tiny bit of coconut oil or olive oil in a non stick fry pan. Add the banana egg mixture in little pancakes. Turn down the heat. Be careful not the burn the pancakes. Add some berries to the mixture. Flip them when ready. Add some extra fruits or if you like some maple syrup or nutella. But obviously this will add lots of sugar and calories. It’s up to you. I prefer using 1 egg and 1 banana because I want the pancakes to taste like pancakes and not like an omelet with banana LOL. But that’s entirely up to you.
