A simple quick lunch with some stuff I already had in my kitchen.
I was looking at this baquette I bought two days ago. Such a waste to trow it away. After going through all the stuff in my fridge and decided to make a nice bruschetta. Popping the baquette in the oven would make it perfect to eat.
– a baquette
– fresh small tomatoes
– bruschetta mix
– buffalo mozzarella
– prosciutto di parma or serrano ham
– grated cheese
– salt and pepper
The bruschetta mix I used came from Oil & Vinegar. This stuff is amazing and super delicious. It’s so easy to make. Just add a little bit of warm water and let it set for a couple of minutes. Add some extra virgin olive oil. Done.
Cut the baquette in slices. Add some bruschetta to each slice. Spread it out with a knife or the back of a teaspoon. Slice the tomatoes and the mozzarella. Put a slice of tomato and mozzarella to each slice.
Add some serrano ham and some peper and salt to taste. Sprinkle with a little bit of grated cheese and you’re done. Pop these babies into the oven or under a grill for 5 to 8 minutes. If you like you can finish it of with some basil, but I didn’t have any at home.
